Making a small batch of sausage?
Need to know how much seasoning per pound?
Per Pound
Garlic: 2 tsp
Cajun Mild: 1 tbs
Cajun Spicy: 1 tbs
Breakfast: 1 tbs + 1/4 tsp
Italian: 2 tsp
If you are wanting to season your meat using a scale, you will need to add 0.02lbs of seasoning per pound of meat.
^^ This is the way we measure our seasonings in our shop.
When making smoked items (like smoked sausage), you must add curing salt to your meat prior to stuffing into a casing. You do not need to change anything with the recipes for our sausage seasonings. Curing salt simply preserves your meat through the smoking process. You can find the listing for curing salt above.
